For the Brownie Layer:
- 1/2 cup unsalted butter melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Cookie Layer:
- 1/2 cup unsalted butter softened
- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chips
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.
For the Brownie Layer: In a medium bowl, whisk together the melted butter and sugar. Add in the eggs and vanilla, mixing until smooth. Sift in the cocoa powder, flour, salt, and baking powder, and stir until combined. Pour the brownie batter into the prepared baking pan, spreading it into an even layer.
For the Cookie Layer: In a separate bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg and vanilla. Gradually add the flour, baking soda, and salt, stirring until just combined. Fold in the chocolate chips.
Drop spoonfuls of the cookie dough over the brownie layer, spreading it gently until it covers most of the brownie layer.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean. Let cool in the pan before cutting into squares.
- You can use homemade brownie and cookie dough or opt for store-bought mixes to save time.
- Make sure to slightly underbake the cookie layer for an extra gooey texture.
- For added flavor, sprinkle sea salt on top before baking.
- Let the Brookie cool completely before cutting for clean slices.
- Customize by adding chopped nuts, peanut butter chips, or caramel swirls.
