- 12 oz of your preferred pasta such as penne or fusilli
- 1/2 cup of homemade or store-bought basil pesto
- 1/2 cup of heavy whipping cream
- 1/4 cup of finely grated Parmesan cheese
- 2 boneless skinless chicken breasts, diced into small pieces
- 1/4 cup of toasted pine nuts for added crunch
- 2 tablespoons of extra virgin olive oil
- 2 cloves of garlic minced finely
- Salt and black pepper to season
- Fresh basil leaves for garnish
Boil the pasta following the directions on the package until it reaches an al dente texture.
Drain and set aside.
Heat the olive oil in a large pan over medium heat.
Add the chicken pieces and sprinkle with salt and pepper for seasoning. Cook until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
