Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup crushed pineapple with juice unsweetened
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts optional

For the Glaze:

  • 1/2 cup butter
  • 3/4 cup granulated sugar
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple drained

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
  • In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
  • In a separate bowl, beat the eggs, then stir in the pineapple (with juice), vegetable oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped nuts, if using.
  • Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, make the glaze by melting the butter in a saucepan over medium heat. Add sugar and evaporated milk, stirring until the sugar dissolves. Remove from heat and stir in vanilla extract and drained pineapple.
  • Pour the glaze over the warm cake and spread evenly. Let the cake cool completely before serving.
