Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup shredded coconut
  • 1 cup macadamia nuts chopped
  • 1/2 cup white chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large mixing bowl, beat together the butter, granulated sugar, and brown sugar until the mixture is light and airy. Add the eggs individually, ensuring to mix thoroughly after each one. Stir in vanilla extract.
  • In a separate bowl, mix together the flour, baking powder, baking soda, and salt.. Slowly fold the dry ingredients into the butter mixture, mixing until just blended.
  • Fold in the shredded coconut, macadamia nuts, and white chocolate chips, if using.
  • Place rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each.
  • Bake for 10-12 minutes, until edges turn golden. Let the cookies cool on the baking sheets for 5 minutes, then move to a wire rack to cool fully.

Notes

  • For a more intense tropical flavor, try using toasted coconut flakes.
  • If you can’t find macadamia nuts, cashews make a great substitute.
  • These cookies freeze well! Store them in an airtight container for up to 2 months and thaw at room temperature when ready to enjoy.
