  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • Optional: powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Beat in the egg, lemon zest, lemon juice, and vanilla extract until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  • Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet about 2 inches apart.
  • Lightly flatten each dough ball with the back of a spoon.
  • Bake for 10-12 minutes, or until the edges are golden.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Optional: dust with powdered sugar before serving.
