Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter melted
Cheesecake Filling:
- 4 8 oz packages Philadelphia cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
Directions:
Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
For the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the prepared pan to form a crust. Bake for 10 minutes, then set aside to cool.
For the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand or stand mixer on medium speed until smooth. Add the sugar and vanilla, and continue to beat until well combined. Add the eggs one at a time, mixing on low speed after each addition just until blended.
Add the sour cream and flour to the mixture, beating on low speed until smooth. Pour the filling over the crust and spread it evenly.
Bake for 50-60 minutes, or until the center is almost set (it should still be slightly jiggly in the middle). Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour. Remove from the oven and refrigerate for at least 4 hours, or overnight, before serving.
- For best results, use room-temperature Philadelphia cream cheese to ensure a smooth and lump-free filling.
- Allow the cheesecake to cool gradually to avoid cracks on the surface. You can do this by turning off the oven and letting it cool inside before refrigerating.
- To enhance the flavor, top with fresh berries, whipped cream, or a drizzle of chocolate or caramel sauce.
- Make sure to wrap any leftover cheesecake tightly in plastic wrap or foil before storing it in the fridge or freezer for long-term storage.
