  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

  • 2 large eggs
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple drained
  • 1/4 cup pineapple juice reserved from the crushed pineapple
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate large bowl, beat the sugar and eggs until light and fluffy. Add melted butter, vanilla extract, and sour cream, and mix until well combined.
  • Stir in the crushed pineapple and reserved pineapple juice.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. If desired, fold in chopped nuts.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
