Ingredients
  

  • 1 cup long-grain white rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 vanilla bean split (or 1 teaspoon vanilla extract)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream
  • Fresh fruit toasted nuts, or cinnamon for topping (optional)

Instructions
 

  • In a medium saucepan, combine the rice, milk, sugar, and salt over medium heat.
  • Scrape the seeds from the vanilla bean and add them to the saucepan (or add vanilla extract later). Stir to combine.
  • Bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low and cook, stirring frequently, until the rice is tender and the pudding has thickened, about 25-30 minutes.
  • Once the pudding reaches your desired consistency, remove from heat. Stir in the heavy cream and vanilla extract if using.
  • Serve warm or chilled, topped with fresh fruit, toasted nuts, or a sprinkle of cinnamon if desired.
